Granulated sugar 1 ½ cups

All purpose flour 1 ¾ cups

Coca powder ¾ cup

Baking powder 1 ½ tsp

Baking soda 1 ½ tsp

Salt ½ tsp

Large eggs 2

Mashed banana 1 cup

Warm water 1 cup

Low fat milk ½ cup

Canola oil ½ cup

Vanilla essence 1 ½ tsp

For Cream Cheese Frosting
-
Low fat cream cheese 8 ounces (room temperature)

Butter 4 tbsp (room temperature)
-
Powdered sugar 4 cups
-
Vanilla essence 1 tsp

For Topping (optional)

Hot fudge

Cooking Directions

For Cupcakes: Preheat oven at 180 degrees C or 350 degrees F. Line 20 muffin cups with paper liners or grease each cup with oil.

In a large bowl mix sugar, all purpose flour, coca powder, baking powder, baking soda and salt.

In another bowl whisk eggs, mashed banana, water, milk, oil and vanilla essence.

Fold wet ingredients in dry ingredients. Spoon batter in cups, filling almost full and bake for 20-25 minutes or until a toothpick inserted in center comes out clean.

Remove from oven and let it cool.

For Cream Cheese Frosting: In a bowl, mix together cream cheese, butter and vanilla; gradually add powder sugar and combine nicely.
-
Immediately frost cupcakes and top with your desired topping.
